THE BEST 5-minute Chef "sandwich"!!!!!

Using my "wrap" recipe I mixed up some egg white, grated romano cheese (the same consistency as green can parmesan), and a spoonful of beef gelatin and poured it in the 5MC. It started cooking right away as I was spreading some shredded mozzarella over it, then some roasted/ground/leftover pork "salad" with mayo and seasonings, then more mozz, and topped it off with the "wrap" mixture. When the bottom was browned I flipped the unit for a few minutes on the other side. WOW...it was CRAZY GOOD and I would have made another one if I hadn't already put my ingredients away. I'm ready for more but already 6 hours into my (daily) fast and don't want to start over again! But WOW this was great!

Found what looks to be a good recipe for rolls without psyllium husk, Rachel! Looks like they might have taken some inspiration from the fathead dough but it isn't the same... I have all the ingredients and am anxious to try them, will advise when I do - and hope you'll do the same if you get there first :).

@cactusketo Thanks! Listing my daily food intake is a popular page [chia.owly.net/meals-recipes-fr], it gets a lot of hits. I have noticed, over time, how I've been trending more and more toward animal-based too, which I wouldn't have really paid much attention to without it! As I've gotten busier, though I have kind of (purposely) let go of the indexing and other details that I kept when my site was smaller and less busy...anything interesting I put on the Keto+ page instead. Maybe I'll have time today...they sound delightful and I have a bunch of havarti to use up here! Also want to try it for "wraps" like provolone (melt it and fold it over something, making pockets), if the little holes will close when it melts would be the biggest thing...just some thoughts I had!

As promised here is my "pizza in pictures" - it is mostly animal-based, except for the sprinkle of yeast I added to the crust for aroma and flavor. I was very pleased with the result other than it was quite salty...due, I'm sure, to the prepared alfredo sauce I used, and the proscuitto. And there's a bonus as well!

Sunday is pizza day in our house...a tradition started when we would pick up a pizza on the way home from church so that we'd have a day off from cooking and cleaning up after eating. As this week has been filled with collywobbles (set off, I believe, from the high-fiber salad I made on Wednesday), I've been leaning more animal-based. And today I am planning a white pizza with a chicken crust.

I have always loved white lasagna (clean deli chicken slices make great "noodle"s!) but this will be my first time making a white pizza. Unfortunately I have a partial jar of prepared alfredo sauce to use up; I'd rather make my own but so be it. Waste not want not.

And while I'm at it, I'm going to try my hand at making my own chicken flour out of the roasted leftover chicken breast I stuck in the freezer. Not a fan of white meat but if this works, I will have a nice use for it in the future!

I will report back later, you can be sure! Pictures 'n' everything!

So I tried a new snack tonight, based upon a blog post by Inspirational Momma - inspirationalmomma.com/2-ingre - I made these crispy snacks, which I ate with a little dollop of full-fat sour cream on each one. I didn't make them exactly the same as the recipe, however; I added a sprinkle of beef gelatin to the eggs to make SURE they'd be crispy! But these are great even for carnivores (at least, those who eat dairy)! Quite good!

Delicious lunch - will probably be my supper also...

A can of chicken, drained + a thin slice of onion, finely chopped + a small cucumber, diced + 6 HB eggs, chopped + seasonings to taste + "healthy noodles" chopped + mayonnaise.

This made a FANTASTIC salad!

(healthynoodle.com/products are the noodles, and I find them to be the best of any other low carb noodle substitutes I have tried. Others disagree in the reviews - but I love 'em!)

Cool on the substitutions you made! I once tried to do some of the same changes to a banana bread recipe and it was a disaster haha πŸŒπŸ˜‚

So I, hate processed foods (though I have some lunch meat I'm trying to use up...but I digress), am making "keto friendly" brownies. From a mix. It was a buck at a local Amish store. Pete can't have eggs so I subbed shredded zucchini, and he can't have dairy so I subbed coconut oil for the butter...and added some SF chocolate chips for good measure. Today is the last day of our 2-weeks of anniversary celebrations and I wanted to do something special. So I blew the cobwebs off the box and got out the mixer...(my new stand mixer - from a thrift store - it is ROSE GOLD! Can you even...?!?) and in about 11 minutes a bell will ring we'll see what happens. I will add a photo and a review to the comments herein. But it smells good.

Have you ever fried HB eggs in butter (or other healthy fat)?? If not, you should! Eggs are great but can get tiresome, this is just a different texture and they absorb the fat really well this way too! I smash 'em first, or sometimes I cube them, but today I chopped them up and mixed them with some pork sausage, fried them in a half-stick of butter, then melted colby-jack over the top. Delicious!

A PERSONAL NOTE:

I just want to put a reminder out there that I eat to control disease processes in my body and not for weight loss (though that's a side effect that makes my doctor happy, at least). I started low carb in April 2004 for weight loss but in the intervening years I have experimented and tweaked as my health dictates, and as I find things that work best, or aren't worth doing. As an example, I will get a high inflammation response from certain grains - but could eat a half-dozen potatoes without an issue, which wouldn't be how I'd be doing it if I were actually trying to lose weight.

That said, I will likely, after this lovely summer produce season is past, do a trial month or two of a totally animal-based diet. A very conservative carnivore WOE is absolutely not out of the question in the near future, either, for healing reasons. (Frankly I can't wait until all of this processed meat is gone!)

Please remember as I post some of these things that my goals may not be the same as yours, and how to achieve them would naturally vary as well.

@cactusketo @KetoPlus Yes, otherwise we couldn't afford it. We live in the midst of an Amish community and so do most of the grocery shopping at their stores which tend to be much less expensive :). The Boursin comes in different flavors, we got the garlic and herb and it is great to melt over burgers, vegetables, make sauces, create creamy soups, add to eggs...it is great stuff!

After eating more carbs than usual (I eat 50g or less/day, though it is more about the type of carbs than the number of them) the last couple of days in restaurants, I'm now doing VLC; it's the only way I have found to prevent the carb cravings after a planned "binge" - very low carb, very high fat, plenty of protein, and not worrying about IF. So today this is my first meal of the the day, a 5-Minute Chef meal, with the crispy crust made of pork panko and shredded (not canned) parmesan. In the middle is proscuitto, turkey, and Boursin cheese. We got a 2# tub of it at one of our local Amish stores for $5 and I use it for a lot of things! Delicious meal, as satiating as it gets, too!
